Our Story

Cosimo’s Brick Oven restaurants take pride in their commitment to consistency, quality, and dedication to meeting the expectations of each of their customers. Our Regional Tuscan fare with a New World twist is both traditional and innovative, featuring a variety of fresh ingredients and local Hudson Valley products. The casual yet sophisticated décor provides a comfortable atmosphere perfect for business lunches, entertaining friends and family, or enjoying an intimate night out with that special someone.

What truly sets Cosimo’s apart is our wood fired brick oven. The open flame cooking style allows us to create a flavor that is unique to all of our signature pizzas, pastas and entrees. Our handcrafted fresh mozzarella exemplifies the value of quality and family tradition that is the foundation of our restaurants.

Opened in 1992, Cosimo’s on Union was the first Cosimo’s Brick Oven restaurant. It is located on Route 300 in Newburgh with convenient access to I-84 and the New York State Thruway.

Our restaurant offers beautifully decorated private rooms with delicious options for family-style or buffet dining. Our Wine Cellar at Cosimo’s on Union is also available for private parties of up to 25 people. In an intimate setting rich with mahogany woodwork and surrounded by our award-winning wine collection, your party can enjoy exclusive wine tastings and food pairing menus for a decadently memorable gathering.
